Best Comfort Food presents a hot meal you can take to work or school.  Our recipes are quick, easy and less than 30 minutes to cook.  Cook our recipes the night before, refrigerate and reheat the next day.  Or, on the other hand, you can cook our meals and freeze them for next week’s lunch.  Our special today is Tabbouli Lamb Sandwiches

Comfort Food: Tabbouli Lamb Sandwiches

1can (14 ½ ounces) original style stewed tomatoes

½ cup bulgur wheat, uncooked

1 tablespoon fresh lemon juice

½ cups cooked diced lamb or beef

3/4 cup diced cucumber

3 tablespoons minced fresh mint or parsley

1 tablespoon olive oil

Three pita bread cut into halves

Drain tomatoes reserving liquid; pour liquid into measuring cup. Add water, if needed, to measure ¾ cup. In small saucepan, bring liquid to a boil; add bulgur cover and simmer over low heat 20 minutes or until tender. Cool.

Chop tomatoes. In medium bowl, combine tomatoes, meat, cucumber, mint, lemon juice and oil. Stir in cooled Bulgur. Season with salt and pepper, if desired spoon about ½ cup tabbouli into each pita bread half.

Prep/cook time 25 minutes
