Warm and Tote Thai Pork

Thai Pork Recipe

In a stock pot, bring 4 quarts water to a boil. Meanwhile trim the fat from pork. Cut the pork into strips about ¼ inch thick. In a medium-size bowl, combine the pork strips, soy sauce, garlic, ginger, and cayenne pepper. Let the Thai pork recipe stay in 20 minutes to marinate. 

Cook linguine and carrots together in the boiling water until they are tender but still firm to the bite, 9 to 10 minutes. (If you are using fresh linguine, cook the carrots for four minutes before adding the pasta). 

In a large skillet, heat 1 tablespoon of oil over moderate heat. Pour beaten eggs into the pan and fry until the underside is set; turn the eggs over and cook the other side. Transfer the eggs to a plate cut them into ½ inch strips; set aside. Your Thai pork recipe is complete

In the same skillet, heat the remaining oil over high heat. Add the pork and stirfry until it is slightly browned, 3 to 4 minutes. Add beans sprouts and cook until they are slightly wilted, about one more minute. 

Drain a linguine and carrots, transfer them to a serving bowl. Add the pork mixture, the egg strips and cilantro. Toss gently and serve your Thai pork recipe.

Comfort Food: Spicy Sesame Noodles with Chicken

Prep Time: 4 minutes Cooking : 25 minutes

12 ounces dried or 1 pound fresh linguine

1 tablespoon sesame seeds

2 tablespoons vegetable oil

1 tablespoon soy sauce

8 ounces boneless, skinless chicken breasts, thinly sliced

1 tablespoon honey

½ cup Smooth peanut butter

1 tablespoon distilled white vinegar

½ cup hot water

1 tablespoon oriental sesame  oil

¼ teaspoon dried red pepper flakes

1 green onion, sliced diagonally

In a stock pot, bring 4 quarts water to a boil. Cook link weenie in the boiling water according to package directions or until it is tender but still firm to the bite. 

Meanwhile in a skillet, brown sesame seeds over moderate heat until golden brown shaking the pan constantly. Place the seeds in a small bowl and set aside. In the same skillet heat vegetable oil. Add chicken slices and stir-fry until cooked through, about 2 to 3 minutes. Remove the skillet from the heat.

 In a medium size bowl, blend peanut butter and water. Stir in soy sauce, vinegar, honey, sesame oil and pepper flakes. Drain the pasta thoroughly and transfer it to a serving bowl. 

Stir the peanut butter mixture into the linguine until well mixed. Toss the linguine with the chicken and its juices, sprinkle with the toasted sesame seeds and green onion. Serve.

Cooks tip – be sure to taste the soup before adding any salt – canned beef broth is particularly salty and you will probably not need to add more. Because it freezes well and candy quickly reheat it this is an excellent meal to make ahead.

Comfort Food: Vegetable Beef Soup

1 pound lean ground beef 

1 Medium size yellow onion, sliced

4 cups canned beef broth

1 can ( 14 ½ or 16 ounces) Stewed tomatoes

1 package (16 ounces) frozen mixed vegetables such as broccoli, carrots, and cauliflower

1 cup fresh or frozen corn kernels

½ teaspoon dried basil, crumbled

Salt and pepper t5o taste

In a sauce pan, cook ground beef and sliced onion over medium heat, stirring , until the beef is well browned and the onion is tender, about 10 minutes.

 Stir in broth, stewed tomatoes, mixed vegetables, corn, and basil; season with salt and pepper. Cover and cook to a boil over high heat.

Comfort Food: Tortellini Minestrone

Food Note–  tortellini or the round pockets of pasta filled with ground meat or ricotta cheese. There’s meat in a bowl makes use of the fresh tortellini available in the refrigerator section of most supermarkets. The cheese filled ones maybe used in place of the meat filled if you prefer. This soup thickens as it stands – add a bit more broth if I finish supers is desired.

2 tablespoons (1/4 stick) butter or margarine

1 medium size red onion, sliced

2 small yellow squash (about 8 ounces) sliced

1 clove garlic, chopped

5 cups canned beef broth

2 ounces day-old Italian bread, cubed (about two cups)

8 ounces refrigerated or frozen meat filled tortellini

1 package (10 ounces) frozen chopped broccoli, partially thawed under warm running water

12 Cherry tomatoes, halved

Salt and pepper to taste

In a large sauce pan, melt butter over moderate heat. Add sliced onion and sauté until soft, about 5 minutes. Stir in squash and garlic; sauté for 2 minutes.

 Add broth and the bread. Increase the heat to high, cover and bring to a boil over high heat, stirring occasionally. Reduce the heat to low and simmer the soup for 2 to 3 minutes.

Add tortellini and simmer for seven minutes. Increase the heat to high and bring the soup to a boil. Add broccoli and cook until it is tender, 3 to 4 minutes. Season the soup with salt and pepper, stir in cherry tomatoes

Food Notes–  for this Louisiana favorite add as much hot red pepper sauce as your taste buds will allow. Although frozen shrimp works fine, the flavor of fresh would reward you. Serve the soup with a loaf of crusty bread on the side.

1 bag (12 ounces)Frozen uncooked, shelled, and divined shrimp

2 tablespoons (1/4 stick) Butter or margarine

1 Medium size white onion

½ teaspoon dried thyme leaves, crumbled

1 medium size green bell pepper

2 ½ teaspoons all purpose flour

1 can (14 ½ or 16 ounce), peeled potatoes

¼ teaspoon hot red pepper sauce, or to taste

1 teaspoon finely chopped parsley

One small bay leaf

1 ½ cups water salt to taste

Thaw shrimp by placing it in a colander under luke warm running water. Meanwhile, finally chop onion; seed and coarsely chop bell pepper. Coarsely chop tomatoes, reserving the liquid.

In a large sauce pan melt butter over moderate heat. Add the the onion and sauté until soft, about five minutes. Stir in the green pepper, parsley, thyme, Bayleaf, and hot pepper sauce; sauté for one minute. Stir in flour until well mixed.

Add the tomatoes with their liquid, and water; bring the mixture to a boil over high heat. Reduce the heat, cover, and simmer for five minutes. Add the shrimp and continue simmering, covered, until the shrimp is cooked through, about five more minutes. Discard the Bayleaf; season the soup with salt to taste. Ladel the soup into bowls and serve immediately.
