Spinach Salad with Mandarin Orange Recipe

Spinach Salad with Mandarin Orange- lunch recipe wagon presents a lunch you can take to work or school.  Our recipes are quick, easy and less than 30 minutes to cook.  Cook our recipes the night before, refrigerate and reheat the next day.  Or, on the other hand, you can cook our meals and freeze them for next week’s lunch.  Our special today is Spinach Salad with Oranges. No cooking required.

Spinach Salad with Mandarin Orange

This colorful salad mix is the torrent and sweet tastes of spinach and fruit –  it’s excellent with barbecued meat.

¼ cup slivered almonds

3 naval, mandarin or Valencia oranges

½ small red onion

4 cups torn fresh spinach leaves

For the red wine vinegar dressing

¼ cup vegetable oil

1 tablespoon sugar

¼ cup red wine vinegar

½ teaspoon salt

¼ teaspoon ground black pepper

In a large skillet, heat oil for the dressing over moderate heat. Add almonds and Coke until golden, 2 to 3 minutes. Remove the skillet from the heat. Using a slotted spoon, transfer almonds to a small bowl, leaving the oil in the skillet.

To make the dressing, add sugar, vinegar, pepper, and salt to the vegetable oil In the skillet; Into the sugar dissolves. Set aside

.Peel oranges and sliced cross wise. Thinly sliced red onion in a salad bowl, combine the oranges, onion slices, and spinach leaves. Sprinkle with the almonds. Add the dressing, toss gently. Pack into a heated lunchbox for a lunch to go.
