Best Comfort Food to Pack On The Go: Individual Meat Loaves

Best Comfort Food presents a hot meal you can take to work or school.  Our recipes are quick, easy and less than 30 minutes to cook.  Cook our recipes the night before, refrigerate and reheat the next day.  Or, on the other hand, you can cook our meals and freeze them for next week’s lunch.  Our special today is Individual Meat Loaves

Comfort Food: Individual Meat Loaves

Lean ground beef

½ cup package plain breadcrumbs

1 small yellow onion, finely chopped

½ teaspoon salt

1 large egg

½ teaspoon dried oregano or basil, crumbled

2 tablespoons chopped parsley

¼ cup ketchup

2 tablespoons water

¼ teaspoon ground black pepper

Parsley sprigs

Preheat the oven to 375°F. Grease a 12 x 8” baking pan. In a large bowl, using a fork, combine ground beef bread, breadcrumbs, onion, egg, parsley, salt, oregano, and pepper. Shape the mixture into four 3 ½ inch long loaves in the prepared baking pan. Bake them for 25 minutes.

In a cup, combine catch-up and water. Brush the ketchup mixture over the meatloaves. Continue baking them until the juices run clear, about 10 more minutes, occasionally brushing them with more of the ketchup mixture. Transfer the loaf to a warm serving platter garnish with parsley sprigs.
