HOT LUNCH RECIPE WAGON:Honey Glazed Chicken with Oranges

On the side,Toss steamed green beans with lemon juice, melted butter and chopped parsley.

4 Chicken breast half with wings (about 3 pounds)

1/3 cup

2 honey tablespoons orange juice

1/3 cup apricot preserves

1 tablespoons lemon juice

2 navel oranges

1 teaspoon ground Ginger

Pinch salt

Watercress sprigs (optional)

Preheat

the boiler. Cut chicken wings off the breasts. Arrange the chicken breasts and wings, skin side down, on the rack over a broiler pan. Broiled the chicken 5 inches from the heat until lightly browned about 15 minutes.

Meanwhile,

in a small bowl, combine Honey preserves, apricot, Orange juice, Lemon juice, and ginger. Breast chicken with some of the honey mixture and broil one more minute

Turn

the chicken over and continue growing until the chicken is tender, about 10 minutes. Meanwhile, using a sharp knife, cut all the peel off oranges. Cut the peeled oranges crosswise into1/2 inch thick slices. Add the the oranges to the boiler pan with the chicken. Season the chicken with Salt

Press

the orange slices and chicken with the remaining honey mixture and continue boiling into the chicken is lightly browned and orange slices of glazed, about two more minutes. Arrange the chicken and oranges on the warm serving platter, garnish with watercress. Pack into a heated lunch box box for hot lunch to go.
