HOT LUNCH RECIPE WAGON: Coconut Treats
Made with only two ingredients, this simple recipe is bursting with delicious sweetness. You can use store-bought coconut powder, but making your own from shredded coconut is easy and adds a distinct freshness to the finished dessert.
Heaped 1 cup shredded coconut
Scant ½ cup sweetened condensed milk
Put the shredded coconut in a spice mill and grind to a fine powder
Pour the condensed milk into a small saucepan and warm over low heat. Add all but 1 ½ tablespoons of the coconut powder and simmer 2 to 3 minutes, stirring constantly, until the mixture leaves the side of the pan. Don’t burn
Remove the pan from the heat and put aside until the coconut mixture is just cool enough to handle.
Sprinkle the remaining coconut powder onto a plate onto a plate. Wet your hands and shape the mixture into 10 to 12 equal balls. Roll each ball in the coconut powder, cover evenly Pack warm in a heated lunch box for a hot lunch to go.

You can carry your hot lunch in a heated lunch tote.
