If you prefer another version of this favorite standard substitute turkey breasts cutlets for the chicken.
8 slices bacon
2 boneless, skinless chicken breast halves ( about 6 ounces each)
8 slices firm white bread
4 slices firm whole wheat bread
8 large slices ripe tomato
6 tablespoons mayonnaise
8 curly lettuce leaves

In a large skillet, cook bacon over medium heat until crisp, about 5 minutes. Drain on paper towels and cut each slice in half crosswise. Cook chicken in the bacon drippings, let the juices run clear. Pierce with a fork, about 3 minutes on each side. Transfer the chicken breasts to a plate and slice crosswise
Meanwhile in a toaster oven, barely toast the white and whole wheat breads. Cover each slice of toast with mayonnaise. Put half of lettuce and all of the bacon halves on four of the white or wheat bread slices. Cover with half of the tomato slices. Cover the tomato with the whole wheat slices.
Top each whole wheat slice with one chicken; season with pepper. Top with the remaining tomato slices, lettuce and bread. Cut the sandwiches on a diagonal.
