Tabbouli Lamb Sandwiches
1can (14 ½ ounces) original style stewed tomatoes
½ cup bulgur wheat, uncooked
1 tablespoon fresh lemon juice
½ cups cooked diced lamb or beef
3/4 cup diced cucumber
3 tablespoons minced fresh mint or parsley
1 tablespoon olive oil

Drain tomatoes reserving liquid; pour liquid into measuring cup. Add water, if needed, to measure ¾ cup. In small saucepan, bring liquid to a boil; add bulgur cover and
Chop tomatoes. In medium bowl, combine tomatoes, meat, cucumber, mint, lemon juice and oil. Stir in cooled Bulgur. Season with salt and pepper, if desired spoon about ½ cup tabbouli into each pita bread half.
