Spiced Turkey Burgers

1 ¼ pounds ground turkey

2 tablespoons finely chopped onion

¼ teaspoon each salt and ground black pepper

2 tablespoons chopped parsley

¼ teaspoon each ground coriander, ground cumin, and curry powder

1 tablespoon vegetable oil

4 hamburger buns

1 cup alfalfa sprouts or shredded lettuce

1 ripe tomato, sliced

Add crunch to these burgers with a basket of potato or tortilla chips, or a crisp salad

In a medium sized bowl , combine turkey , onion, parsley, salt and pepper, coriander , cumin and curry powder.  Shape the turkey mixture into four patties, each about ½ inch thick

In a large skillet , heat oil over moderately high heat.  Add the turkey patties and cook until browned on both sides and cooked through, about 3 minutes on each side.

Meanwhile toast hamburger buns.  Place a turkey patty in each bun; top each with some alfalfa sprouts or lettuce and slices of tomato.
