Prosciutto is famous for its delicately smoky flavor, which is due to the long time it is allowed to mature. It’s the perfect contrast to ripe, sweet melon.
½ small honeydew melon, chilled
8 ounces thinly sliced prosciutto
½ large cantaloupe
Mint sprigs
Cut honeydew and cantaloupe lengthwise into ½ inch thick wedge shaped slices (about 12 slices each). Remove the rind and arrange the melon slice
Slice prosciutto lengthwise in half. Loosely roll u each slice of prosciutto in a cone shape to resemble a rose, arrange the prosciutto roses in the center of the melon and cantaloupe slices. Sprinkle with pepper, garnish with mint.
