Jalfrezi is a dish in which meat or vegetables are fried in oil and spices to produce a thick dry sauce. Peppers onions and fresh grren chilies are then added to make a medium – hot curry.
3 tablespoons vegetable oil
2 onions chopped
4 garlic cloves , sliced
2 green chilies, chopped
4 teaspoons Manju’s quick Curry Paste
1 teaspoon tomato paste
¼ teaspoon salt
18 ounces skinless chicken breast, chopped into bite sized pieces
2-inch piece gingerroot, peeled and grated
2 green bell peppers, seeded and sliced

Heat the oil in a saucepan over a moderate heat. Add the onions chilies and garlic, fry, stirring frequently, 6 to 8 minutes until the onions are browned
Add the curry paste, tomato paste and salt and stir 1 minute. Stir in the chicken pieces and continue stirring 7 to 8 minutes until they change color and the spices blend with the chicken.
Bring 1 cup water to a boil and stir this into the pan
Add the ginger and green peppers, simmer, uncovered 5 minutes, stirring occasionally until the sauce thickens and the chicken is cooked through. Check by cutting a piece of chicken in half – the juices should run clear.
