Cheddar Quesadillas

The quick hors d oeuvres and first courses make quick work of preparing party food, so you have more time for friends.

4 tablespoons vegetable oil, divided

8 small flour tortillas ( 7 or 8 inches in diameter)

1 can (4 ounces) chopped green chilies, drained divided

8 ounces cheddar cheese, coarsely grated (2 cups)

1 small ripe avocado

1/3 cup prepared thick style tomato salsa

 

Manage Your Diet Anywhere

In a large skillet or griddle, heat 1 tablespoon oil over moderate heat.  Put one flour tortilla in the pan and sprinkle it with ½ cup cheese and one quarter of the green chilies.  Put another tortilla on top and press gently. Seal the tortillas together.

Cook the tortilla sandwich or quesadilla , turning it once with a broad spatula, until the cheese begins to melt, about 5 minutes.  Transfer the quesadilla to a cutting board and cut it into four wedges. Repeat

Transfer the quesadillas to a serving platter.  Peel and pit avocado, and cut into 16 thin slices.  Garnish each quesadilla wedge with the avocado and about 1 teaspoon of tomato salsa.
