Guacamole –Our school lunch recipe wagon presents a school lunch you can take to work or school. Our recipes are quick, easy and less than 30 minutes to cook. Cook our recipes the night before, refrigerate and pack for the next day. Or, on the other hand, you can cook our meals and freeze them for next week’s lunch. Our special today is Guacamole
SCHOOL LUNCH RECIPE WAGON: Guacamole
3 ripe avocados, peeled and pits discarded
1 peeled mild green chili (no seeds, fresh or canned), chopped
2 tablespoons lime juice
1 teaspoon salt
Unsalted blue corn chips
medium tomato, peeled, seeded, and chopped, (1)
small onion, chopped (1)
1 bunch cilantro ( Chinese parsley), chopped
- Mash the avocados by hand until chunky. Add the next six ingredients and stir until blended.
- Pack guacamole in a 10 Hour Personal Cooler with the corn chips for a lunch to go.
This should be eaten the same day it’s made
