Best Comfort Food to Pack On The Go: Chicken Blocks

Our school lunch recipe wagon presents a school lunch you can take to work or school.  Our recipes are quick, easy and less than 30 minutes to cook.  Cook our recipes the night before, refrigerate and serve the next day.  Or, on the other hand, you can cook our meals and freeze them for next week’s lunch.  Our special today is Chicken Blocks

SCHOOL LUNCH RECIPE WAGON: Chicken Blocks

Warm and Tote 10 HOUR Personal Cooler

4 ounces boneless and skinless chicken breast ( about ½ chicken breast)

1 (14 ½ ounce) can chicken broth

3 packets unflavored gelatin

1 ½ cups cold V-8 juice                            

  • Poach the chicken in the broth over medium high heat for 15 minutes or until cooked through.
  • While the chicken is poaching, sprinkle the gelatin over the V-8 juice and let stand for 1 minute
  • Put the cooked chicken and hot chicken broth into a food processor or blender and process until pureed. Add the juice and gelatin mixture and process until well mixed.  Pour into an 8 or -9 inch square baking pan. Refrigerate until set. At least 3 hours Cut into 1 inch squares. Pack them in your 10 Hour Personal cooler.

Storage:

These squares will last for about 1 week in your refrigerator.
