Avocado Blocks-Our school lunch recipe wagon presents a school lunch you can take to work or school. Our recipes are quick, easy and less than 30 minutes to cook. Cook our recipes the night before, refrigerate and pack for the next day. Or, on the other hand, you can cook our meals and freeze them for next week’s lunch. Our special today is Avocado Blocks
SCHOOL LUNCH RECIPE WAGON: Avocado Blocks
1 ( 6 ounce) can frozen orange juice concentrate, thawed
¼ cup cold water
Packets unflavored gelatin
1/3 cup ripe avocado chunks
1 cup boiling water
- Combine the orange juice concentrate and water in a bowl and sprinkle the gelatin over the liquid. Let stand for 1 minute.
- Pour this mixture into a blender and add the avocado chunks; blend until very smooth. Pour boiling water into the blender and blend again until smooth.
- Pour into an 8 or 9 inch square baking pan. Refrigerate until set, at least 3 hours, Cut into 1 inch squares. Pack into a 10 hour personal cooler for lunch on the go.

STORAGE: Avocado Blocks
These squares will last for about 1 week in your refrigerator.
