
Our hot lunch wagon presents a hot lunch you can take to work or school. Our recipes are quick, easy and less than 30 minutes to cook. Cook our recipes the night before, refrigerate and reheat the next day. Or, on the other hand, you can cook our meals and freeze them for next week’s lunch. Our special today is Veggie Quesadillas
HOT LUNCH WAGON: Veggie Quesadillas
Tortillas are a delicious and healthful alternative to bread and crackers, and now they’re readily available in almost all supermarkets, usually in the dairy case. (If you want to warm plain tortillas, wrap them in damp paper towels and microwave for a few seconds.) This is more of a snack, but it contains some hidden veggies inside.
1 flour or corn tortilla
2 tablespoons (about ½ ounce) grated cheddar cheese
1 tablespoon minced red, green, or yellow bell pepper
- Place the tortilla on a dinner plate. Sprinkle the cheese and minced pepper on half the tortilla. Fold the tortilla in half over the over the topping.
- Microwave for 30 seconds, or until the cheese is melted. Cut into 4 wedges and pack in a heated lunch tote for lunch.
Variations: You can also heat this in a toaster oven or under a broiler, just until the cheese is melted. If you have any bits of leftover meat or fish, you can also mince these to add to the cheese. Sliced avocado can also be used.
Any hard or semi-hard cheese can be substituted for the cheddar in this recipe. Monterey Jack, mozzarella, Swiss.
You can carry your hot lunch in a heated lunch tote.
