Best Comfort Food to Pack On The Go : Tortilla Pie

Our hot lunch wagon presents a hot lunch you can take to work or school.  Our recipes are quick, easy and less than 30 minutes to cook.  Cook our recipes the night before, refrigerate and reheat the next day.  Or, on the other hand, you can cook our meals and freeze them for next week’s lunch.  Our special today is Tortilla Pie

HOT LUNCH WAGON: Tortilla Pie

You could call this a Mexican lasagna, only it’s much easier to make. The texture is soft enough for young tastes, and it has a very mild flavor.

2 cups mixed frozen vegetables, thawed (see hints)

¼ cup chopped onion

¾ cup tomato puree or sauce

1 teaspoon chili powder (see hints)

¼ teaspoon salt

3 corn tortillas

½ cup (about 2 ounces) grated Muenster cheese

  • Preheat the oven to 375 degrees F. Coat an 8 or 9 inch round or square cake pan with nonstick baking spray.
  • Put the vegetables, onion, ½ cup of the tomato puree’ or sauce, chili powder, and salt into a food processor and grind until mixture is pureed.
  • Place 1 tortilla on the bottom of the cake pan. Apply half of the vegetable mixture to the edges of the tortilla and top with the second tortilla.  Spread with the remaining vegetable mixture and top with the third tortilla.  Smear this tortilla with the remaining ¼ cup tomato puree, or sauce and sprinkle with the cheese. Cover pan with foil and bake for 20 minutes, or until the cheese has melted and the pie is heated through.

HINTS:

You can use mixed frozen vegetables, but you can also use one or more of the following: corn, carrots, green peas and green beans.

There are 2 kinds of chili powder sold in jars in the supermarket – “hot” and plain.  If you are making this for babies or children, be sure to buy the latter.

COOKING AHEAD OF TIME:

You can make this up completely and refrigerate it up for 24 hours; when it’s time for dinner, simply pop it in the oven for 20 minutes (add 5 minutes to the cooking time if it’s taken directly out of the refrigerator.)

STORAGE:

This will keep in the refrigerator for up to a week.  You can reheat it by covering the pan with foil and putting it in a 300 degree F oven until it’s heated through.

You can carry your hot lunch in a heated lunch tote.
