Best Comfort Food to Pack On The Go: Hamburgers A’ La Lindstrom

Our hot lunch wagon presents a hot lunch you can take to work or school. Our recipes are quick, easy and less than 30 minutes to cook. Cook our recipes the night before, refrigerate and reheat the next day. Or, on the other hand, you can cook our meals and freeze them for next week’s lunch. HOT LUNCH WAGON: Hamburgers A’La Lindstrom

This is the Swedish version of a hamburger – a meal in itself, with meat , potato and vegetable all together.  You can serve it plain or with a burger bun.  You can also buy small round whole wheat rolls and split them in half horizontally to make mini hamburger buns.

8 ounces ground beef

1 medium potato, cooked, peeled and grated ( about ¾ cup)

1 (8 ¼ -ounce) can cooked beets ( sliced or whole), drained and grated (about ¾ cup)

2 eggs, lightly beated

½ teaspoon vegetable oil

  • In a small bowl, mix all the ingredients except the oil.  Form into patties.
  • Heat the oil in a skillet over medium heat.  Cook the patties on both sides, until crusty on the outside and cooked through (time will depend on size of patties)

VARIATIONS: In Sweden, this is usually served with a fried egg on top; in Finland, it is served with mounds of golden crisp-fried onions.

STORAGE: This mixture, uncooked will keep in the refrigerator for up to 3 days. Ou can form the uncooked mixture into patties and freeze them to defrost in the microwave and pan fry when ready to pack for lunch.

You can carry your hot lunch in a heated lunch tote.
