HOT LUNCH RECIPE WAGON: White Fish in Tomato Curry
Using only a few basic spices brings out the subtle and delicate flavors of the fish in this quick and zesty dish. The white fish can also be replaced with an oily fish, such as tuna mackerel
½ teaspoon turmeric
¼ teaspoon salt
18 ounces skinless, boneless sole, coley, or cod filets, cut into 3 inch pieces
3 tablespoons vegetable oil
2 inch piece gingerroot, peeled and chopped
5 garlic cloves chopped
2 onions, finely chopped
½ teaspoon ground cumin
2 onions, finely chopped
½ teaspoon ground coriander
2 large plum tomatoes, finely chopped
Sprinkle the turmeric and salt over fish
- Heat the oil in a large saucepan over medium heat. Add the ginger, onions until the onions are golden brown.
- Add the tomatoes, cumin, coriander and chili powder and cook, stirring, 2 minutes. Bring ¼ cup water to a boil.
- Put the fish in the pan and simmer 2 minutes longer, taking care not to break up the pieces.
- Pour the boiling water over and simmer 8 to 9 minutes longer until the fish is cooked through and the flesh flakes easily. Serve with potatoes and cauliflower. Pack warm in a heated lunch tote for lunch on the go.
