Best Comfort Food to Pack On The Go: Teeny Chicken Dumplings

Teeny Chicken Dumplings-Our hot lunch recipe wagon presents a hot lunch you can take to work or school.  Our recipes are quick, easy and less than 30 minutes to cook.  Cook our recipes the night before, refrigerate and reheat the next day.  Or, on the other hand, you can cook our meals and freeze them for next week’s lunch.  Our special today is Teeny Chicken Dumplings

HOT LUNCH RECIPE WAGON: Teeny Chicken Dumplings

These Baby dumplings are delicious by themselves or in  a clear soup. They are also a great way to put turnips, or other strong tasting vegetables, into child’s diet- although you can certainly substitute a more customary vegetable.

1/2 cup peeled and coarsely chopped turnips

8 ounces boneless and skinless chicken breast, cut uo  about ½ chicken breasts)

1 egg white

¼ teaspoon orange or lemon rind (dried or fresh)

1 teaspoon cornstarch

1 teaspoon sugar

Coarse salt (1 tablespoon)

1 tablespoon reduced-sodium soy sauce

  • Grind all ingredients except salt together in a food processor.
  • Put 2 quarts of water and the salt in a medium pot and bring to a boil, reduce heat so water simmers.
  • Using a teaspoon and/or your hands, form the mixture into small balls about 1 inch in diameter, and drop them, in small batches, into the simmering water.  Use a slotted spoon to gently scrape the balls off the bottom of the pot, so that they float to the top.  Poach for 10 minutes , until chicken is cooked through.  Drain on paper towels and pack warm in a heated lunch tote for a hot lunch on the go.

VARIATIONS


These dumplings can also be poached in chicken stock or broth; it will give them a richer flavor and you can use the poaching liquid later in  another recipe.

Any other root vegetable – carrots, potatoes, parsnips, rutabaga- can be substituted for the turnips.

You can also saute’ these as little patties in  a small amount of olive oil or vegetable oil.  Cook until brown and crisp on both sides.

COOKING AHEAD OF TIME

You can make up the raw mixture and keep it in the refrigerator for up to 2 days, cooking the dumplings or sautéing the patties as you need them.

STORAGE

These cooked dumplings or patties can be refrigerated for up to 3 days.

You can carry your hot lunch in a heated lunch tote.
