Best Comfort Food to Pack On The Go: Summer Pasta With No-Cook Sauce

Our hot lunch recipe wagon presents a hot lunch you can take to work or school.  Our recipes are quick, easy and less than 30 minutes to cook.  Cook our recipes the night before, refrigerate and reheat the next day.  Or, on the other hand, you can cook our meals and freeze them for next week’s lunch.  Our special today is Summer Pasta With No-Cook Sauce

HOT LUNCH RECIPE WAGON: Summer Pasta With No-Cook Sauce

This is best made in the summer, when you can get fresh, ripe tomatoes. It takes a few minutes to prepare, but it is addictively delicious that everybody in the family will want a bowl.

1 large ripe tomato, seeded, and cut into ½ inch cubes ( see hints)

¼ cup olive oil (see hints) 

1 garlic clove, cut in half

¼ cup basil or flat parsley leaves

½ teaspoon salt

Freshly ground pepper to taste

¼ pound (4 ounces) pasta (see hints)

  • In a large serving bowl, mix the tomato cubes, olive oil, basil or parsley, garlic, salt and pepper
  • Cook the pasta in a large amount of salted water.  While it’s draining, remove the garlic from the sauce and discard. Mix the pasta into the bowl with the sauce and toss.  Serve hot, or at room temperature ( see hints)

HINTS:

Tomatoes are easily peeled by dropping them in a pot of boiling water, waiting for about 30seconds, then removing them.  The skins will slip off with the aid of a sharp paring knife.  (This also works for peaches, by the way.)

Be sure to choose an olive oil that has a strong, assertive olive taste.  It doesn’t need to be an expensive extra-virgin variety.  Goya is a supermarket brand that has good flavor.

Use any long, thin pasta shape that you like, whole wheat spaghetti or spaghettini.

NOTE:

This dish can be served hot, just when it’s made or at room temperature.  Pack it warm in a heated lunch tote for a hot lunch.
