Spiced Greens– Our hot lunch recipe wagon presents a hot lunch you can take to work or school.  Our recipes are quick, easy and less than 30 minutes to cook.  Cook our recipes the night before, refrigerate and reheat the next day.  Or, on the other hand, you can cook our meals and freeze them for next week’s lunch.  Our special today is Spiced Greens – (Hari Sabzi)

HOT LUNCH RECIPE WAGON: Spiced Greens

Indians use a wide variety of leafy greens in their cooking, including radish, carrot, pumpkin, and turnip leaves.  Kale makes a good substitute for the greens in this dish, which is traditionally prepared with potatoes, beans or peas.

2 tablespoons vegetable oil

1 garlic clove, crushed

½ teaspoon salt

1 green chili, chopped

½ teaspoon salt 

1 pound leafy greens such as savoy cabbage

  • Cook the oil in a skillet or wok over medium high heat.
  • Add garlic, fry, stirring, 30 seconds, Don’t burn
  • Add the chili, salt, and greens and fry, stirring constantly, 10 minutes or until the green are tender.  Pack warm in a heated lunch tote for a hot lunch on the go.
