Our hot lunch recipe wagon presents a hot lunch you can take to work or school. Our recipes are quick, easy and less than 30 minutes to cook. Cook our recipes the night before, refrigerate and reheat the next day. Or, on the other hand, you can cook our meals and freeze them for next week’s lunch. Our special today is Lentils and Pasta
HOT LUNCH RECIPE WAGON: Lentils and Pasta
¾ cup lentils
1 tablespoon olive oil
2 cups ditalini pasta
1 tablespoon minced garlic
Salt
1 ( 8 ounce ) can tomato sauce
Water ( 1 3/4 cups )
1 chicken bouillon
¼ cup grated parmesan or Locatelli cheese
- Cover the lentils with water and soak them overnight at room temperature.
- Heat the olive oil in a 2 quart pot over medium heat. Include the garlic and saute’ for 1 minute. Add the tomato sauce drained lentils, water and bouillon cube. Cover pot and bring to boil, reduce heat to simmer, and cook until lentils are tender 20 to 30 minutes.
- Cook the pasta in a large amount of boiling salted water, drain, and mix with the cooked lentils and cheese. Pack warm for lunch in a heated lunch tote.

STORAGE
This will keep well in the refrigerator for 4 days
You can carry your hot lunch in a heated lunch tote.
