Lentil Soup– Our hot lunch recipe wagon presents a hot lunch you can take to work or school. Our recipes are quick, easy and less than 30 minutes to cook. Cook our recipes the night before, refrigerate and reheat the next day. Or, on the other hand, you can cook our meals and freeze them for next week’s lunch. Our special today is Lentil Soup (Dal Shorba)
HOT LUNCH RECIPE WAGON: Lentil Soup
Shorba (or shorva) is the Hindi word for soup. This spicy broth is made with red lentils, although you could just as easily use yellow lentils. Red lentils make a quicker-cooking version of the soup and easier to digest.
Heaped ½ cup split red lentils
2 green chilies
1 tablespoon butter
3 black peppercorns
1 garlic clove, chopped
½ teaspoon salt
A pinch of asafoetida
Boil
Cut
off the chili stems and make a slit on each of the chilies, set aside.
Melt
the butter in a small skillet over medium heat. Add the chilies, peppercorns, garlic, salt and asafetida, let the spices sizzle 30 seconds, or until you can smell the aroma. Don’t burn. Pour the mixture carefully into the lentils.
Pour
the boiling water over and continue simmering, uncovered, 5 minutes, or until the spices have blended into the lentils. Pack warm in a heated lunch tote for a hot lunch on the go.
