Lemony Stuff Zucchini –hot lunch recipe wagon presents a hot lunch you can take to work or school. Our recipes are quick, easy and less than 30 minutes to cook. Cook our recipes the night before, refrigerate and reheat the next day. Or, on the other hand, you can cook our meals and freeze them for next week’s lunch. Our special today is Lemony Stuff Zucchini
HOT LUNCH RECIPE WAGON: Lemony Stuff Zucchini
4 zucchini, about 6 oz each
1 teaspoon sunflower oil
Finely grated rind and juice of ½ lemon scant
1 garlic clove, crushed
6oz cherry tomatoes, halved
1 teaspoon ground lemongrass
2 tablespoon toasted cashews
Salt and black pepper
Sprigs of thyme, to garnish
Preheat the oven to 400 F. Halve the zucchini lengthwise and use a teaspoon to scoop out the centers. Blanch the shells in boiling water for 1 minute, then drain well.
Chop the zucchini flesh finely and place in a saucepan with the oil and garlic. Stir over moderate heat until softened, but not browned.
Stir in the lemongrass, lemon rind and juice, rice, tomatoes and cashews. Season well and spoon into the zucchini shells. Place the shells in a baking pan and cover with foil.
Bake for 25-30 minutes or until the zucchini is tender, then serve hot with thyme sprigs. Pack warm in a heated lunch tote for a hot lunch on the go.
