Our hot lunch recipe wagon presents a hot lunch you can take to work or school. Our recipes are quick, easy and less than 30 minutes to cook. Cook our recipes the night before, refrigerate and reheat the next day. Or, on the other hand, you can cook our meals and freeze them for next week’s lunch. Our special today is Lamb with Cumin and Ginger – Keema Masala
HOT LUNCH RECIPE WAGON: Lamb with Cumin and Ginger
3 tablespoons peanut oil
4 garlic cloves chopped
2 onions chopped
¼ teaspoon salt
1 teaspoon ground cumin
2 green chilies, chopped
1 teaspoon ground coriander
¼ teaspoon turmeric
2 teaspoons tomato paste
18 ounces ground lamb
2 -inch piece gingerroot, peeled and grated
¼ teaspoon Garam Masala
A few cilantro leaves
- Heat the oil in a saucepan or wok over medium temperature. Put in the garlic, onions, and chilies and fry, stirring frequently, 6 to 8 minutes, while the onions turn golden brown.
- Stir in the cumin, ground coriander, turmeric, salt and tomato paste, then reduce the hatand continue frying 1 minute longer
- Add the lamb, increase the heat, and continue frying, stirring 8 to 10 minutes, using a wooden spoon to break up the me, until it is no longer pink.
- Add the ginger and garam masala, stir well, then sprinkle with the cilantro leaves. Serve with cucumber relish. Pack warm in a heated lunch tote for lunch on the go.
