Best Comfort Foods to Pack On The Go – Lamb Meatballs

Lamb Meatballs– Our hot lunch recipe wagon presents a hot lunch you can take to work or school.  Our recipes are quick, easy and less than 30 minutes to cook.  Cook our recipes the night before, refrigerate and reheat the next day.  Or, on the other hand, you can cook our meals and freeze them for next week’s lunch.  Our special today is Lamb Meatballs

HOT LUNCH RECIPE WAGON: Lamb Meatballs

In their simplest form, Koftas are meatballs flavored with spices.  However, in northern Indian cuisine, they are often cooked in a spicy aromatic sauce with a rich garnish of nuts and cream.

18 ounces ground lamb

2 -inch piece gingerroot , peeled and grated

2 green chilies, chopped

1 teaspoon paprika

2 garlic cloves, crushed

1 teaspoon salt

3 tablespoon vegetable oil

2 onions, finely chopped

½ teaspoon ground cumin

1 teaspoon tomato paste

½ teaspoon ground coriander

½ teaspoon turmeric

2 tablespoons heavy cream

½ teaspoon chili powder

A handful sliced almonds

½ teaspoon garam masala

1 teaspoon tomato paste

2 tablespoons heavy cream

Put

the lamb in a bowl and use hands to mix in ginger, chilies, garlic, paprika, and ½ teaspoon of the salt. With damp hands roll the mixture into 16 equal meatballs

Heat

3 tablespoons oil in a skillet over medium -high heat .  Add the meatballs and fry 6 to 7 minutes, turning them in the oil until they are light brown.  It might be necessary to do this in small sets depending on the size of your pan.  Add extra oil to the pan, if necessary.  Use a slotted spoon.

Add

onions into the oil remaining in the pan and fry, stirring frequently, 6 to 8 minutes until they are golden brown.  Bring 2 cups water to a boil while the onions are frying

Add

the cumin, coriander, turmeric, chili powder, garam masala and remaining ½ teaspoon salt.  Fry, stirring occasionally, I minute until you can smell the aroma of the spices. Stir in the tomato paste

Return

the meatballs to the pan and pour in the boiling water.  Reduce the heat to low, cover, and simmer 6 to 8 minutes until small droplets of oil appear on the surface.

Swirl

in the cream and sprinkle with the almonds.  Pack warm in a heated lunch tote for a hot lunch on the go.
