HOT LUNCH RECIPE WAGON:Green Peppers with Cumin
A touch of turmeric and tomato paste adds a warm golden glow to a quick and colorful dish that is prepared in a matter of minutes
2 tablespoons vegetable oil
1 onion, sliced
2 garlic, cloves, sliced
4 green bell peppers, seeded and cut into strips -inch thick
1 green chili, chopped
¼ teaspoon turmeric
1 teaspoon ground cumin
¼ teaspoon salt
1 tomato chopped
A pinch Garam Masala
1 teaspoon tomato paste
- Heat the oil in a large saucepan over medium heat. Add the garlic and onion and fry, stirring frequently, 2 minutes, or until the onion starts to soften
- Add the peppers, chili, turmeric, cumin, and salt and continue frying 2 minutes. Stir in the chopped tomato and continue frying 2 minutes longer until the tomato starts to soften
- Stir in the tomato paste and continue cooking, stirring, 2 minutes or until the peppers are tender
- Add in the garam masala and pack warm in a heated lunch tote for a hot lunch on the go.

You can carry your hot lunch in a heated lunch tote.
