Cook our recipes the night before, refrigerate and reheat the next day. Or, on the other hand, you can cook our meals and freeze them for next week’s lunch. HOT LUNCH RECIPE WAGON: Cumin Infused Peas
This quick recipe uses a few basic spices to jazz up fresh peas – and is versatile enough to be served hot, chilled or at room temperature. If you cannot get hold of fresh peas, frozen ones provide a good alternative.
2 tablespoons vegetable oil
½ teaspoon brown mustard seeds
1 teaspoon ground cumin
½ teaspoon ground coriander
¼ teaspoon chili powder
2 cups shelled peas, thawed if frozen
¼ teaspoon turmeric
1 teaspoon freshly squeezed lemon juice
¼ teaspoon salt
- Heat the oil in a large pan over medium heat. Insert the mustard seeds and fry, and stir, 30 seconds, or until they splutter. Examine carefully so they do not burn.
- Stir in the cumin, coriander, chili powder, turmeric, salt, and peas and continue frying 2 minutes longer
- Sprinkle the lemon juice and 2 tablespoons water over the peas. Continue cooking 1 minute longer, or until the peas are tender. Pack warm in a heated lunch tote for a hot lunch on the go.
You can carry your hot lunch in a heated lunch tote.
