Chicken Jalfrezi-Our hot lunch recipe wagon presents a hot lunch you can take to work or school. Our recipes are quick, easy and less than 30 minutes to cook. Cook our recipes the night before, refrigerate and reheat the next day. Or, on the other hand, you can cook our meals and freeze them for next week’s lunch. Our special today is Chicken Jalfrezi (Murgh Jalfrezi)
HOT LUNCH RECIPE WAGON:Chicken Jalfrezi
Jalfrezi is a dish in which meat or vegetables are fried in oil and spices to produce a thick, dry sauce. Peppers, onions and fresh green chilies are then added to make a medium-hot curry.
3 tablespoons vegetable oil
2 onion, chopped
4 garlic, cloves sliced
2 green chiles, chopped
4 teaspoons Manju’s quick curry paste
1 teaspoon tomato paste
2 green bell peppers, seeded and sliced
¼ teaspoon salt
18 ounces skinless chicken breast chopped into bite size pieces
2 inch piece gingerroot, peeled and grated
Heat
the oil in a saucepan over a moderate heat. Include the garlic, onions, , and chilies and fry, stirring frequently, 6 to 8 minutes make sure the onions are golden brown.
Add
the curry paste, tomato paste, and salt, and stir 1 minute. Stir in the chicken pieces and continue stirring 7 to 8 minutes until they change color and the spices blend with the chicken.
Bring 1 cup water to a boil and stir this into the pan.
Add
the ginger and green peppers and simmer, uncovered, 3 minutes, stirring occasionally, until the sauce thickens and the chicken is cooked through. Check by cutting a piece of chicken in half, the juices should run clear. Pack in a heated lunch tote for a hot lunch on the go.
