Our hot lunch recipe wagon presents a hot lunch you can take to work or school. Our recipes are quick, easy and less than 30 minutes to cook. Cook our recipes the night before, refrigerate and reheat the next day. Or, on the other hand, you can cook our meals and freeze them for next week’s lunch. Our special today is Chicken – Broccoli Muffin Meal
HOT LUNCH RECIPE WAGON: Chicken -Broccoli Muffin Meal
These are so delicious that they passed the ultimate taste test. This recipe is a great way to use up nutritious broccoli stems that are usually thrown away.
4 ounces boneless and skinless chicken breast ( about ½ chicken breast)
½ cup chopped broccoli stems (save florets for another meal)
¼ cup chopped onion
½ cup (2 ounces) grated swiss cheese
1 tablespoon chopped parsley
¾ cup evaporated milk (1/2 of a 12 ounce can)
2 eggs
1 teaspoon salt
½ teaspoon ground pepper
- In enough water to cover, poach the chicken over medium-high heat for 15 minutes, or until cooked through.
- Heat the oven to 400 degrees F. Coat 6 cups of a standard muffin tin with a nonstick spray.
- Put all the ingredients, including the cooked chicken, in a food processor and process until pureed. Spoon an equal amount of the chicken mixture into each of the cups. Bake for 40 minutes, or until firm to the touch and light golden brown. Unmold and pack in a heated lunch tote.

VARIATION:
You can use leftover cooked chicken for this; for that matter, you can use any cooked meat or fish instead of the chicken – even canned tuna. The equivalent for any cooked meat or fish is ½ cup.
You can also bake the mixture in a 9 x 5-inch loaf pan, leaving it in the oven long enough to become firm and light golden brown, about 45 minutes.
STORAGE:
These muffins will keep for about 1 week in the refrigerator
You can carry your hot lunch in a heated lunch tote.
