HOT LUNCH RECIPE WAGON: Cabbage with Red Chiles
Indian cooks from the south use coconut as frequently as cooks in the north use onions – and it features in both sweet and savory dishes. The shredded cocnut in this recipe can be replaced with freshly grated coconut.
3 tablespoons vegetable oil
2 dried red chilies
1 teaspoon brown mustard seeds
4 ¼ cups finely shredded white cabbage
1 teaspoon freshly squeezed lemon juice
½ teaspoon salt
1 tablespoon shredded coconut
- Heat the oil in a large skillet or wok over medium heat. Add the chilies and mustard seeds, continue frying for 30 seconds, stirring , or until they begin to splutter. Be careful to prevent burning
- Add the cabbage and salt, then increase the heat to medium high. Fry stirring constantly, 5 to 6 minutes until the cabbage is tender
- Stir in the lemon juice and coconut. Pack warm in a heated lunch tote for a hot lunch on the go.
