Our hot lunch recipe wagon presents a hot lunch you can take to work or school.  Our recipes are quick, easy and less than 30 minutes to cook.  Cook our recipes the night before, refrigerate and reheat the next day.  Or, on the other hand, you can cook our meals and freeze them for next week’s lunch.  Our special today is BROAD NOODLE LASAGNA AND RICOTTA

HOT LUNCH RECIPE WAGON:  Broad Noodle Lasagna and Ricotta

¼ pound lasagna noodles ( about 5 noodles)

1 cup mashed sweet potato ( about 1 medium potato; see hint)

½ cup ricotta cheese

1 egg

¾ teaspoon salt

1 teaspoon minced fresh parsley

  • Cook the lasagna noodles according to package directions until soft; drain, reserving ¼ cup of the cooking water
  • Preheat oven to 350 degrees F
  • Stir together the sweet potato, ricotta, egg, parsley, and salt; add the reserved cooking water.  Cut the cooked noodles into small pieces- the size will depend on the age of your children- and stir gently into the sweet potato mixture.  Put this mixture into an ovenproof dish just large enough to hold it (approximately 1quart capacity) and bake for 30 minutes.  Pack warm in a heated lunch tote for a hot lunch. (if you are making this for an older child, you might like to layer the whole cooked noodle and sweet potato mixture as for a lasagna.)


You can cook a sweet potato by microwaving it, baking it, or boiling it in the skin, just like a white potato. When it is cool enough to hand le, peel off the skin with a parin knife and put the cooked potato through a ricer or a wire mesh sieve. You can also mash it by hand.  Youcan use whole wheat lasagna noodles.  Cook them for 11 minutes before adding to the sweet potato mixure.


To make the recipe even easier, use canned mashed pumpkin, which is packed without any sugar or other additives.


You can make up the lasagna and refrigerate it for a day before cooking.  Bake it just before mealtime, adding 5 minutes to the baking time if its just been taken out of the refrigerator.


This will keep in the refrigerator for 3 days.

You can carry your hot lunch in a heated lunch tote.
