Our hot lunch recipe wagon presents a hot lunch you can take to work or school. Our recipes are quick, easy and less than 30 minutes to cook. Cook our recipes the night before, refrigerate and reheat the next day. Or, on the other hand, you can cook our meals and freeze them for next week’s lunch. Our special today is Avocado Muffins
HOT LUNCH RECIPE WAGON: Avocado Muffins
This recipe is a good way to use overripe avocados that are too mushy to put into salads. The muffins have a gentle flavor, and are good plain or with a bit of honey on top.
½ cup ripe avocado cubes
1 egg
½ cup milk
2 tablespoons orange juice
1 cup whole wheat flour
¼ cup granulated brown sugar
2 teaspoons baking powder
¾ teaspoon ground cinnamon
¼ teaspoon salt
- Preheat the oven to 350 degrees F. Coat 5 cups of a muffin tin with nonstick baking spray.
- Put the avocado cubes, egg, milk and orange juice into a food processor and process until the mixture is pureed. Add the four, brown sugar, baking powder, cinnamon and salt and process until mixed.
- Spoon an equal amount of the mixture into each of the cups. Tap the muffin tin on the counter a few times to eliminate air bubbles. Bake for 20 minutes, or until the tops of the muffins spring back when touched. Place warm in foil, pack in a heated lunch tote for a hot lunch.

STORAGE
These muffins will last for about 1 week in your refrigerator.
You can carry your hot lunch in a heated lunch tote.
