Best Comfort Food to Pack On The Go: Lasagna Style Bowtie Pasta

FALL LUNCH RECIPE WAGON: Lasagna Style Bowtie Pasta

Enjoy the robust flavors of lasagna and only a fraction of the time it takes to create the traditional version Harriet

8 ounces farfalle (bowtie shaped pasta)

1 tablespoon vegetable oil

8 ounces ground turkey or lean ground meat

1 small yellow onion, chopped

2 tablespoons grated Parmesan cheese

1 jar (14 ounces) prepared plain spaghetti sauce

4 ounces mozzarella cheese, grated (1 cup)

1 large egg

1 cup part skim ricotta or low fat cottage cheese

Pre-heat

the oven to 425°F. Grease an 8 -inch square baking dish. In the stockpot, bring 4 quarts of water to boil. Partially cooked pasta in the boiling water for half the time given in the package directions.

Meanwhile

in a skillet, heat oil over medium heat.Add onion and sauté for one minute., About three minutes. Add spaghetti sauce; bring to a boil. Reduce the heat to low, partially cover the skillet, and some of the sauce for five minutes.

In

a small bowl, combine ricotta parmesan, and egg. Drain the pasta thoroughly. Layer half of the pasta in the prepared baking dish. Spoon the cheese mixture over the pasta. Sprinkle half of the meat sauce over the cheese mixture, and spoon with half of the mozzarella. Layer the remaining pasta, sauce and mozzarella

Cover

the pan with aluminum foil and bake for 15 minutes. Uncover the pan and bake and additional 5 to 8 minutes, or until heated through. Pack in a heated lunchbox for hot lunch to go.

You can carry your hot lunch in a heated lunch tote.
