Hot Lunch Recipe Wagon: Yummy Sauce For Pasta

Our hot lunch wagon presents a hot lunch you can take to work or school.  Our recipes are quick, easy and less than 30 minutes to cook.  Cook our recipes the night before, refrigerate and reheat the next day.  Or, on the other hand, you can cook our meals and freeze them for next week’s lunch.  Our special today is Yummy Sauce For Pasta

HOT LUNCH RECIPE WAGON:  Yummy Sauce For Pasta

You can serve this with whole wheat pasta, such as spaghetti or elbow macaroni, and top with a generous amount of freshly grated cheese.

½ chopped carrot

1 small onion

½ chopped celery

1 tablespoon olive oil

½ pound ground meat ( beef, pork, veal, chicken, turkey or a combination)

1 (16 ounce) can crushed tomatoes ( American brands are best)

¼ cup chopped fresh basil or Italian parsley leaves

½ cup chicken or beef broth

2 teaspoons coarse salt

  • ½ cup dry red wine

Generous amount of freshly ground pepper

  • In a heavy medium saucepan over medium heat, saute’ the carrot, celery, and onion in the olive oil until the onion is transparent, about 3 minutes
  • Add the meat and cook, stirring, for 3 to 5 minutes. Insert the rest of the ingredients and heat to a boil; lower the heat to a simmer and cook, stirring intermittently, for 1 hour.

VARIATIONS

  • If you’d like the sauce to be smoother, puree in batches in a blender.  (if you’re not using it right away, let the sauce cool for at least 30 minutes before pureeing, so that I’s not too difficult to handle.)
  • You can use this to make delicious English muffin pizzas.  Spoon on some of this sauce, top with mozzarella cheese, and heat until melted and bubbly under the broiler.

STORAGE

This sauce will keep for about a week in the refrigerator. You can make  a double or triple batch, then freeze it in 4 ounce containers; dinner or lunch can be ready to eat in the amount of time it takes to cook the pasta.
